Peanut Butter Oatmeal Chocolate Chip. Amazeballs.

Happy Fancy Thursday.  Some fancy freakin’ Thursday, I can’t even put on a bra.  That’s right kids, mom is STILL home in her sweat pants, eatin’ her bon bons and watching Oprah.  – SIDE BAR: WHAT THE FLIP HAPPENED TO MARTHA?!?! All I knew was that she was supposed to be on at 10 am here in Chicago and I come to find out that she is no longer on standard television.  So I try not to panic and get myself if a cough attack and just search for her.  Well, she has changed to the Hallmark Network.  I tried to not get myself further in a tizzie until I knew if I in fact HAD Hallmark Network. I don’t.

What. is the point of being sick. if you can’t watch Martha Stewart?  What the eff am I supposed to do here? DEEP SIGH. Anyway enough about how the standard networks are not showing proper appreciation for Martha. Dad strolled out of here today looking just like Jim Tressel.  Sweater Vest. On Fancy Thursday.  So here is hoping you got your ass out of bed today and fixed your hair, ‘cause Lord knows I didn’t.  

Holy Eff. I just have to say it. Holy. Eff.  I was all “Sad face I don’t feel good, whine whine, cough, sneeze gag” feeling bad for myself with no one here to listen to it yesterday so I self soothed by making cookies.  I was totally expecting them to suck because I was feeling sucky and sometimes your attitude really messes up your food.

Wrizong.  I wanted cookies.  I wanted peanut butter, I wanted oatmeal, and most importantly, I wanted chocolate.  I stumbled upon EXACTLY that from our girlfriend over at Brown Eyed Baker.  Sister. Is. Not. Playin’. Around. 

Peanut Butter. Oatmeal. Chocolate Chip. Cookies.
Talk about epic cookies, these were SO EASY to make, and they were SO. GOOD.

Peanut Butter-Oatmeal Chocolate Chip Cookies by Brown Eyed Baker
1 cup all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
1 stick (½ cup) unsalted butter, at room temperature
½ cup creamy peanut butter
½ cup granulated sugar
1/3 cup light brown sugar
½ teaspoon vanilla extract
1 egg
½ cup rolled oats
1 cup semisweet chocolate chips



1. Preheat oven to 350 degrees F. Line two baking sheets with parchment paper and set aside.
2. Whisk together the flour, baking soda and salt; set aside.
3. On medium speed, cream together the butter, peanut butter, granulated sugar, brown sugar and vanilla extract, about 3 minutes. Add the egg and beat to combine. On low speed, gradually add the flour until just combined. Stir in the oats, and then the chocolate chips.
4. Use a large cookie scoop (3 tablespoons) and drop dough onto prepared baking sheets about 2 inches apart. Bake for 10 minutes, or until the cookies are lightly golden. Cool completely on the baking sheet and then store in an airtight container at room temperature.

The next time you’re sick, I am sending some of these your way. As for me, I am still couching it.

  1. Aww...feel better, Whit! And when I'm sick, I whine...and Michael orders pizza. My foofie husband doesn't really cook that much. You're one up on me by baking cookies while feeling bad ;)!

  7. Yum! Don't you love BEB? Have you read the story in the NY times about the secret to Choc chip cookies and how you should let the dough sit in the fridge overnight? I've tried it and it works!!

  8. Oh Jillian, silly goose, I could NEVER let cookie dough set for more than an hour anywhere and expect there to be any left! Such a good thought, but in my house, that shit would never fly! :) Thanks, maybe one day Ill have the will power!

  9. Dude, I make a slightly altered version of that recipe all the frickin time! Only I use egg whites, no salt, equal parts brown & reg sugar, and I love my oatmeal so i always throw in 1C. Yours look Deelicious!
