Holy Pumpkin Guac-a-moly.

Here's the what's what.


I have a shit ton of canned pumpkin left over.  I went for it.  I went the grocery store and bought pumpkin like it was flared denim in 1998.  I don't apologize, it's just, you can only wear flared jeans for so long, and likewise, you can only have so much pumpkin before you start to smell funny... and turn a little orange... and if you're me, you're baking that pumpkin and therefore, your dress pants are gettin' a LITTLE too tight.


So, I needed to make room (in my pantry, and in my pants.) And I needed to prep myself for the fact that less than a month from now, I'll be in Mexico, in a bathing suit.

All these things led up to Pumpkin Guacamole.   I know, why didn't you think of that? Yea. Go on, celebrate missing summer and loving fall all at the same time.  Maybe enjoy it with some Dos Equis.  No shame.


Pumpkin Guacamole



1 cup pureed pumpkin
1/4 cup Sour cream
1 Diced avacado
1/2 Diced butternut squash
Optional Curried pumpkin seeds
2 tablespoons Cilantro
Pinch of Nutmeg
Juice of 1 Lime
Pinch of Ancho Chili Powder
1/8 Teaspoon Cumin

Whisk the pureed pumpkin, sour cream and spices together.  Add the diced pumpkin, cilantro and butternut squash.  Finish with lime juice and the curried pumpkin seeds.


Best with pita chips.  

Best to eat around a crowd, so you don't turn into a pumpkin on your own.  


Best be hitting Jillian Michaels 30 day shred to eliminate said issue with pumpkin legs and dress pants.

  2. This is definitely interesting! Last year I bought a case (no joke) of pumpkin puree...and as a result, this year I've barely touched pumpkin!
